Grapefruits are fabulously high in fiber. In comparison to other citrus fruits like oranges, grapefruits contain close to double the amount of fiber – about 12 whopping grams of fiber per whole grapefruit. Considering the daily recommended amount of fiber for adults is between 25 and 35 grams, eating one whole grapefruit a day will provide you with nearly half of your daily need. Because of the high amount of fiber in grapefruits, they are beneficial for colon health and for keeping cholesterol at a healthy level.

Grapefruits are packed with vitamin C

Another health benefit of grapefruits comes from their high amount of vitamin C. Eating grapefruits all year round will help keep your immune system in good shape to fight off colds and flu. You may even consider upping your grapefruit intake during the winter months when illnesses tend to run rampant.

Grapefruits are antioxidant-rich

Finally, grapefruits are extremely high in antioxidants, which can help combat cancer and boost heart health. Regular consumption of grapefruit, grapefruit juice, and all fruits and juices that contain antioxidants is also beneficial for your overall health.

How to select grapefruit

Opt for grapefruits that are fairly round in shape and heavy for their size, indicating a thinner skin and more juicy flesh. Avoid blemished grapefruits since they may have been overhandled. Give the grapefruits a gentle squeeze and choose the ones that are slightly soft. Skip the grapefruits that feel overly soft or mushy. Give the grapefruits a sniff and select the ones with a nice fruity, citrusy fragrance, which is an indication of ripeness – the riper the grapefruit, the higher level of antioxidants.

How to store grapefruit

If you plan to eat your grapefruits within three to four days, simply store them at room temperature and away from direct sunlight. If you plan to eat them later than that, store them in the refrigerator where they can last for up to three weeks.

How to prepare grapefruit

Rinse grapefruits under cool water before you cut them. You can cut them in half, peel them like oranges, or cut away the peel and in between the membranes to segment them.

Ham, egg and cheese waffle sandwich recipe

Wondering what to do with all that leftover ham from the holidays? Eat it for breakfast! The whole family will love these waffle grilled cheese sandwiches, so pull out that waffle iron and put it to good use. If you're short on time, you can even substitute frozen waffles — we won't tell!

Ham, egg and cheese waffle sandwich recipe

Yields 1

Ingredients:2 spicy cheddar cheese waffles (see recipe below)Sliced cheese (cheddar, Monterey Jack or pepper Jack)Sliced ham1 eggButterDirections:
    Cover one waffle with sliced cheese, then layer sliced ham on top. Place other waffle on top of ham. Butter both outer sides of the sandwich.Melt a small amount of butter in a pan over medium heat. Fry an egg to desired doneness. Remove and reserve.Quickly place waffle sandwich into the same pan, cheesy side on the bottom. When cheese is starting to melt and waffle is browned and crisp, flip over. Cook until browned and crisp on other side. Remove from pan.Lift one side of the sandwich and place the fried egg in the middle. Replace waffle and cut open.
Spicy cheddar cheese waffles

Yields 4-6, depending on size of waffle iron

Ingredients:1 cup milk1 large egg1/4 cup vegetable oil1 cup flour1 teaspoon sugar1/4 – 1/2 teaspoon salt1-1/2 teaspoons baking powder1/2 cup grated cheddar cheeseCayenne pepper, to tasteDirections:
    Whisk milk, egg and oil together in a large bowl. Add flour, sugar, salt and baking powder. Mix until just combined. Stir in cheese and cayenne pepper.Heat waffle iron according to manufacturer's directions. Pour appropriate amount of batter into waffle iron and close lid. Cook waffles until browned and crisp.Keep waffles in a 200 degree F oven until ready to use.
Tip

To taste the seasonings of your waffles, cook a small spoonful of batter in the waffle iron. Adjust with more salt or cayenne pepper, as needed.

Place on a baking sheet in the oven and cook for about 25 minutes, tossing occasionally.When finished cooking, put the vegetables in a large soup pan and add the wine, broth and thyme.Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 30 minutes.Season the mixture, then use an immersion blender to carefully blend the soup until it is smooth (you could use a regular blender and work to blend in batches).Slowly add the heavy cream to the mixture and mix well.Serve in individual bowls, and allow each person to top the soup with cheese and the gluten-free herbed croutons.

Vegetarian Stuffed Peppers

 

1 small can green chili's2 cups instant brown rice, uncooked1 can tomato sauce1 1/2 cup chicken broth1 can black beans, drained1 cup sharp cheddar cheese4 red, green, or yellow bell peppersPreheat oven to 400 degrees.olive oil

In a large pot, combine green chilis, rice, tomato sauce, and broth. Bring to a boil and cook until rice is tender, about 12-15 minutes. While the rice is cooking, clean the bell peppers, then slice the top 1/3 off of the peppers. Remove and discard all seeds and pith.

Take the pot of rice from the stove and stir in the black beans and cheese. Spoon the rice mixture into the center of the peppers. Set the stuffed peppers on a cookie sheet, replace the tops of the peppers, drizzle lightly with olive oil, then put the cookie sheet in your preheated oven. Allow peppers to bake for 30-35 minutes, or until the exterior is soft and slightly browned. Allow to cool slightly before serving.

Cherry-flavored cola has been around for many years and is always a popular vending machine choice, but Pepsi Japan's newest fruit-flavored creation may have you thinking twice.

For those Pepsi purists who won’t even let their lips touch Coca-Cola, this may be a bit much. Pepsi Japan will soon unveil their newest flavor: Salty Watermelon. This flavor might sound a bit odd to us, but probably not to those in Japan where it is common practice to eat watermelon sprinkled with salt. The salt apparently brings out the flavor of the watermelon, but what will it do for the Pepsi?

This isn't Pepsi's first flavor that might have you scratching your head. In the early 1990s, fruity flavors like Strawberry Burst, Tropical Chill and Raging Razzberry made short-lived appearances on grocery shelves. Holiday Spice popped up during the holidays for a few years but had no staying power. Other recent Pepsi Japan offerings have included Pepsi White, which is infused with yogurt, and Pepsi Pink, a strawberry milk concoction. One thing's for sure: Pepsi Japan has no shortage of imagination when it comes to flavor combinations.

A classic eggs Benedict dish is basically an egg sandwich that includes a form of pork (usually ham) as one of its ingredients, served on an English muffin. The rich hollandaise sauce for this dish is a staple.

For Meatless Monday, this recipe swaps out the ham and replaces it with roasted asparagus and a thick tomato slice. Not only is asparagus in season, but pairing it with hollandaise sauce is a tried-and-true combination, so you know it will taste divine! Even better, the sauce is easy to make and it’s a reduced fat, full-flavor option. If you think this recipe is only for breakfast, think again! We love breakfast for dinner on a Meatless Monday!

You can serve your eggs as you prefer for this dish, although poached is the typical method.

Use very fresh eggs, and remember to use a gentle touch when cooking them. Follow these steps for poaching perfection:

Use a sauté pan deep enough to hold two to three inches of water (enough to cover the entire egg).Boil the water, and then reduce it to simmer and add about a teaspoon of vinegar to the water for each egg you're cooking (this helps the egg whites solidify and keeps the yolk intact).Carefully crack your first egg into a shallow cup, and then gently tip it into the water. Then carefully add the remaining eggs in the same way.If you'd like, you can use a spoon to gently gather some of the egg white and spoon them over the yolk.Cook the eggs for two to three minutes, undisturbed.Use a slotted spoon to gently remove the eggs from the pan while draining the water.Veggie eggs Benedict with simple hollandaise sauce

For the hollandaise sauceIngredients:1/2 cup reduced fat mayonnaise3 tablespoons water1 tablespoon lemon juice1/8 teaspoon white pepperDirections:
    Combine all the ingredients in a small saucepan.Whisk until smooth.Cook the mixture over low heat, stirring constantly.Simmer for about five minutes or until thoroughly heated.Keep warm while you put together the rest of the dish.
For the sandwichIngredients:6 eggs, cooked to your preference6 slices thickly cut tomato (roast slightly if you like)1 bunch asparagus, ends trimmed and sliced in half2 tablespoons olive oilSalt and pepper to taste6 English muffins, split and toasted just prior to servingNonstick cooking sprayDirections:
    Preheat your oven to 350 degrees F.Lightly spray a baking sheet with the nonstick cooking spray. Lay the asparagus on the sheet on one level. Drizzle them with the olive oil and lightly season with the salt and pepper.Roast the asparagus for about 15 to 30 minutes, until soft yet still firm.Toast your English muffins, and then place the bottom halves on a serving platter.To the bottom halves of each muffin add a tomato slice, then three to four asparagus pieces and the egg.Drizzle with the hollandaise sauce and add the top halves of the muffin to each.Serve while warm.

Ice cream sandwiches are a classic summer ice cream treat. They are a perfect combination of chocolate cake and creamy cold vanilla ice cream. But this summer treat can indeed get a little sticky. We have taken the stickiness (and messiness) out of ice cream sandwich eating by putting it on a stick. By doing this we have turned this favorite summertime treat into an on-the-go-easy-to-eat treat. Totally perfect for summer. Plus, we rolled the edges in sprinkles because who doesn't love sprinkles?

Ice cream sandwiches on a stick recipeIngredients:

Yields 12 sandwiches

12 mini ice cream sandwiches12 Popsicle sticks2 tablespoons sprinklesDirections:
    Unwrap ice cream sandwiches and gently (this is key) slide the stick into the middle of the ice cream. If the ice cream is too hard, let it sit out for a few minutes to soften a bit.Roll edges in sprinkles and set on a parchment-lined cookie sheet. Continue until all sandwiches are on sticks. (You may have to freeze in between sandwiches if they start to melt).Put tray into freezer and serve within the same day.
