Ice cream sandwiches are a classic summer ice cream treat. They are a perfect combination of chocolate cake and creamy cold vanilla ice cream. But this summer treat can indeed get a little sticky. We have taken the stickiness (and messiness) out of ice cream sandwich eating by putting it on a stick. By doing this we have turned this favorite summertime treat into an on-the-go-easy-to-eat treat. Totally perfect for summer. Plus, we rolled the edges in sprinkles because who doesn't love sprinkles?
Ice cream sandwiches on a stick recipeIngredients:Yields 12 sandwiches
12 mini ice cream sandwiches12 Popsicle sticks2 tablespoons sprinklesDirections:- Unwrap ice cream sandwiches and gently (this is key) slide the stick into the middle of the ice cream. If the ice cream is too hard, let it sit out for a few minutes to soften a bit.Roll edges in sprinkles and set on a parchment-lined cookie sheet. Continue until all sandwiches are on sticks. (You may have to freeze in between sandwiches if they start to melt).Put tray into freezer and serve within the same day.
